I wrote about firehouse cooking in the magazine some time ago (cooking duties are taken so seriously they’re part of firefighter training), but you can taste it for yourself Friday at the Honolulu Firefighters Foundation fundraiser, when the firefighters cook up their slow cooked beef melange (melange: a fancy word for odds and ends—true economical firehouse cooking) and kiawe-smoked pork with onions.
